Tortilla Quiche
2 cups milk
5 Hickman’s eggs
2 cups Mexican blended cheese
bacon bits (optional)
t tablespoon lemon or lime juice
1 can green chili enchilada sauce
lemon pepper to taste
1 tablespoon flour
flour tortillas
Spray 13×9 dish and preheat oven to 350 degrees
Line tortillas to cover bottom of dish.
In mixing bowl, blend whole eggs first, then add lemon or lime juice, lemon pepper, and milk while blending. Keep all all ingredients, except for the cheese, until well blended. Pour mixture to cover tortillas in dish. Sprinkle a layer of cheese, then pour another layer of egg mixture. Top with cheese and enchilada sauce. Place in oven for 45 minutes, or slightly longer if desired. Oven temperatures vary, so keep checking.
