Our recipes demonstrate the egg's unique ability to "move around the plate" as an ingredient in appetizers, snacks, desserts, soups, and salads - and as the star of a variety of entrees.
These are great for those mornings on the run as they can be made the day before and popped in the microwave on your way out the door. Use cupcake liners (the foil kind) first for easy removal. Otherwise, lots of butter would work, too.
1 dozen eggs
1/2 cup cooked meat
1/2 cup diced veggies
1/4 t salt
1/4 t pepper
1/2 cup mayonnaise (Secret ingredient — keeps them moist! Half and half will also work. )
1/2 cup water
Add whatever else you like: cheese, onions, salsa, etc.
Bake 18 minutes at 350 degrees.
