Zesty Papa Protein Scramble

Ingredients:
4-6 Hickman eggs
6-8 cooked Greer family red potatoes (shredded or diced)
1-1/2 cups favorite cheese
2 avocados, sliced/diced
1 cup cooked/diced bacon or sausage
1 cup diced green chiles
Optional: 1 cup cooked, chopped spinach, parsley, or artichokes
Butter to coat skillet and then some!
Lemon pepper to taste
Fresh lemon or lime juice (lime is preferred)

Optional toppings: Sour cream, salsa, tamed jalapenos, serve with tortilla or toast!

In large non-stick skillet, melt butter, reheat potatoes, fold in bacon/sausage, spinach, green chiles, avocados, and when hot enough, crack eggs to fold into potatoes mixture. Your meal is done within minutes!

Great for camping. As is, it takes one skillet! By wrapping the mixture in a tortilla, you save utensils and plates!
